3 Ways to use Cauliflower
Riced Cauliflower
I made riced cauliflower two different ways. I made it in the blender and in a food processor. Each way worked a little bit different and turned out completely different.
In the Ninja
Let me first start by saying that I personally liked how my riced cauliflower turned out in the Ninja better than the food processor, but people may have other opinions.
To start my rice in the Ninja I cut the cauliflower where there was very little stem still left on it. I broke it up into chunks, but not too small. I then added the whole head of cauliflower into the Ninja at once (it was a small head of cauliflower.) I turned on my Ninja and the cauliflower was riced to my liking in 5 seconds or less on the 2 setting. (Video on the Insta!)
In the Food Processor
The riced cauliflower in the food processor did not really work out for me. I'm not sure if you can tell from the picture, but the riced cauliflower was more like couscous cauliflower. This was even after I broke up the florets into little tiny pieces.
Mashed Cauliflower
Mashed cauliflower ladies and gentlemen, it is one of my new favorites! It tasted very similar to mashed potatoes, but with like way less calories and carbs. I added salt, pepper, and ghee to mine.
I cut the cauliflower into chunky florets and put them in a pot of salted boiling water. I let the cauliflower boil for 10 minutes and then I drained the water out and set the pot of cauliflower back on the warm eye, but turned off and I just used a whisk to mash it up and added the salt, pepper, and ghee in as I mashed.
Cauliflower Pizza Crust
For my cauliflower pizza crust I put a small head of cauliflower in the blender and riced it. I then took the riced cauliflower and spread it out on a kitchen towel and took the towel with the riced cauliflower in it and rang out the water. This actually took a lot more effort than I realized it would.
After, I got the water out I put the riced cauliflower in a bowl with mozzarella cheese, parmesan cheese, Italian spices, salt, pepper, and some coconut flour, and an egg. I used my hands to work the ingredients all in a ball together.
Next, I put parchment paper on a baking sheet and lightly sprayed it with olive oil cooking spray. I then put the dough out on the parchment paper. I had preheated my oven to 450 degrees. I cooked my dough for 12 minutes. Cooking time may vary, just watch for the crust to start browning.
I made mine into a very quick and easy pizza. I made my own pizza sauce using canned tomato sauce, salt, pepper, Italian spices, and some coconut flower. I put mozzarella and feta cheeses on top. I baked it for about 7 minutes and just watched for the cheeses to melt.
