Brownies with Zucchini That Taste GREAT

Peanuts and chocolate together, UM YUM!!! You cannot even tell these brownies have zucchini in them.
Let your mind be open for these delicious brownies. These to me do not taste like your plain jane brownies, but they are a healthier alternative for sure.
These brownies are low calorie and low-carb AND still delicious!

I have a tradition for Valentine's that I make my husband heart-shaped brownies. This year we are eating healthy, or healthier than we have been so I decided to try this alternative to your typical brownie recipe.
Ingredients:
1 1/2 cup finely shredded zucchini (You want to get it as fine as possible, so the brownies are not chunky.) 6 tablespoons melted butter 2 tablespoons coconut oil (melted) 1 large egg 1/2 cup natural granulated sweetener (I chose to use Splenda, but am planning to try them again with Stevia in the Raw.) 1 tablespoon pure vanilla extract 3/4 cup peanut flour 1/3 cup unsweetened cocoa powder 1 teaspoon baking powder 1/4 teaspoon sea salt 6 squares Lindt 85% chocolate (or your favorite chocolate), cut into pieces/chunks
Instructions:
1. Preheat oven to 350 degrees F. Grease your pan. (I used the heart-shaped 6 brownie pan, and had some extra.) You can use an 8x8 pan as well.
2. Mix together shredded zucchini, melted butter, melted coconut oil, egg, sweetener, and vanilla. After mixing enough to blend all ingredients add in the cocoa powder, peanut flour, baking powder and salt. Mix all ingredients thoroughly. Add in 4 squares of cut chocolate (Save the rest to sprinkle on top of brownies.)
3.Bake brownies for 30 minutes. Brownies will still be wet with toothpick test, but they will be set after cooling.
4. Allow brownies to cool completely
5. Store refrigerated for up to 3 or 4 days.



I used My Fitness Pal to find out the nutrition facts of my brownies. The heart brownies that I made were 191 calories per heart and only 9g of carbs.
** I will note that from my chocoholic father he only ate half a brownie and noted that the brownies were good, but obviously not really brownies. He did say they would be effective in helping him not eat too much chocolate.
