The Ultimate Breakfast Casserole

I am not a huge fan of breakfast casseroles, but this week I decided to make one to see whether or not I might like one I created myself. I have now decided I am a fan of breakfast casserole.

 

This is a master piece, it was so good that it only lasted in my house for about 3 days. (I had planned on it lasting the entire week, but things change when its that good.)

I decided to name this the Ultimate Breakfast Casserole, because it is packed with so much healthy ingredients and so much flavor all at the same time.

This was my first go at this recipe I created, but check back later for some updates and I keep working and tweaking it to be even better.

 
 

Ingredients:

1 large sweet potato (Or enough to cover up a majority of the bottom of your dish)

1 pound mild sausage

1 pound hot sausage (Or if you don't like spicy things just stick with two pounds of mild sausage)

1 cup raw kale

1/2 cup spinach

1 dozen eggs

Garlic Powder (to taste)

Salt and Pepper (to taste)

Directions:

1. Preheat your oven to 350F degrees

2. Brown your sausage (If you want you can do it in two batches)

3. While your sausage is browning cut up your sweet potato into thin slices

4. Spray your pan or dish with cooking oil (Or if you are like me and don't use spray you can take olive oil and a basting brush and grease the pan that way.

5.Cover the bottom of the pan or dish in cut up sweet potatoes.

6. Crack the dozen eggs in a bowl and beat them. Add in the spices and beat them in as well.

7. Using a slotted spatula put your sausage over the pan of sweet potatoes (A slotted spatula will allow for the grease to drip back into the pan and not allow so much grease in the casserole.)

8. After rinsing and drying your kale and spinach spread it out evenly on top of the sausage.

9. Evenly pour your eggs over the kale and spinach.

10. Bake for 25-30 minutes (Keep an eye on the eggs. You don't want it to burn, but you don't want the eggs to be runny either.)

11. Take out and enjoy or save for later.
