Zucchini Noodle Casserole

Let me just start out by saying I have made this meal about 5 times now for my family. It is quickly becoming a go-to meal that is simple and easy.

Zucchini Noodle Casserole

I have been in a comfort food, but still healthy kick lately. In Chattanooga it has been weirdly cold and rainy this week and so that meant all the comfort foods. Do you have a favorite rainy or cold day comfort food to make? Share what your favorites are with me, I love to add more ideas to my comfort food recipes.

 

Ingredients:

3 Zucchini

2 Bell Pepper

2 Pounds of Italian Sausage

1 Onion

1 24oz jar of pasta sauce

Italian Seasonings

Salt and pepper to taste

Cheese to top your casserole (You can use any kind and I just sprinkle it on top where I want it to be. You can also leave off the cheese if you want it to be paleo compliant.)

 

Instructions:

1. Make your zucchini into zoodles (Set aside on a paper towel or dish cloth to begin getting the water out of the noodles.)

2. Preheat oven to 400 degrees F

3. Cook peppers and onions until soft, then set aside

4. Cook Italian sausage thoroughly.

5. Add peppers and onions back to skillet

6. Add pasta sauce to skillet. (Make sure your skillet will hold everything, if not you can put the meat and veggies on top of zoodles and then distribute pasta sauce evenly.) Let simmer for 5 minutes

7. Spray pan with cooking spray or grease it with olive oil.

8. Squeeze as much water out of zoodles as possible and then spread them out evenly in casserole dish.

9. Salt and pepper zoodles.

10. Add skillet mixture over the zoodles and add Italian spices to the dish. (Sprinkle cheese if you wish)

11. Cook casserole for 25 minutes or until zoodles are tender.

12. Serve and Enjoy

Notes:

  • To make this I use my large cast iron skillet found here.

  • I use an Italian spice mixture from Publix.

  • My spiralizer can be found here.

  • I have tried this casserole using Mexican blend cheese (pictured) and parmesan cheese on top. I personally prefer the parmesan cheese on top.

  • You can also reduce the amount of sausage to 1 pound if you don't want so much meat.
