Chicken Stir-fry

 

This meal was sooo simple and easy to make, but that was mostly because I used a package of mixed vegetables that came with sauce included from Sam's Club.

To add some more substance I added some cauliflower rice that I made and added some egg in it to make fried rice, as well as some onion for texture and taste. I seasoned the riced cauliflower with salt, pepper, soy sauce, and some garlic powder. I would have added carrots and peas as well, but I decided to make it last minute and did not have any to add to it.

To make my riced cauliflower I followed my simple instructions here. And then just cracked two eggs after having started cooking the riced cauliflower for a few minutes before with olive oil and salt and pepper.

To prepare the chicken for this meal I seasoned it with salt and pepper and cooked it in a cast iron skillet for 4 minutes on each side. Then took it out and cut it into small bite sized pieces and added back to the skillet to finish cooking.

I then added the vegetables in the skillet with the chicken and added the packet of teriyaki sauce in with the chicken and vegetables.

Brussels Sprouts

Carrot Chips

Snap Peas
