Sweet and Savory Chicken Salad
I am a huge fan of all things sweet and savory. Chicken salad is my number one go to for sweet and savory.
I make chicken salad differently every time I make it, but this go around was one that I thought was worth sharing.
Here is my step by step instructions on making my sweet and savory chicken salad:
Boil 2-4 Chicken Breasts (Depending on how much chicken salad you would like.) Boil the chicken for about 30 minutes and then check to make sure it is cooked thoroughly.
Put boiled chicken in Kitchen Aid Mixer Bowl and shred chicken with the mixer. (If you do not have a stand mixer you can try using a hand mixer or shred with two forks.)
Mix in olive oil mayo. Here is my favorite kind to use. The amount of mayo depends on the amount of chicken you use. I use a recipe of 1 cup of may for every 2 chicken breasts. You can add more or less depending how much you would like.
Cut up 2-4 stalks of celery, 1 onion, and 10-20 grapes (halved). Add ingredients to chicken salad and mix in well with a spatula.
Add in Tony's seasoning, salt, and pepper to taste.
Serve in a Cococonut Wrap by Nuco and enjoy!
