On the Go Meal
One thing that I have found with working full-time and trying to eat healthy is to always prepare meals before hand. Most of the time for me this means that I prepare meals before the week begins.
A great and easy idea for pre-planned meals is salad. Each week I always cut up lettuce and veggies to have for a salad at anytime, sometimes I even go ahead and put the salad in containers with some sort of protein if I know it is going to be a crazy week.
The salad that is pictured in this post is one of the easier ones that I have to make. I used romaine hearts and cut them up and then took carrots, onions, and green onions. I then took some deli turkey and cut it up and put it on top. You could also add proteins such as: chicken, shrimp, steak, chicken salad, tuna, or even some tofu.
As for salad dressings you can pretty much choose whatever you like. I like to take the easy route if I know it will be kept cold all day long, and keep it in the bottle. If that isn't the case, however, you can put it in a small container as well. I would not recommend putting it on your salad ahead of time, it can make the lettuce wilt.
I used Evoo Garlic Basil Italian dressing on my salad, it is also really great as a marinade for chicken as well.
Another quick on the go meal would be lettuce wraps. You can just take what you would normally put on a sandwich and put it on lettuce instead. If you normally use Mayo, but are on Whole 30 try this Whole30 approved mayo.
